Chef Wiedmaier is preparing Lamb in Maderia Sauce. Maderia is a sauce made with fortified wine from the island of Maderia, a Portuguese archipelago. Chef Wiedmaier brings the dish to life by adding fresh rosemary, thyme and bay leaves to the vegetables while also staying true to his classic technique of browning his lamb over a cast iron skillet. He uses the bone of the lamb in cooking the sauce to bring out the hearty side of the Maderia and take full advantage of every culinary aspect the lamb has to offer.
