In culinary continuation, a legend is rejuvenated with a new and exciting adventure by Chef Srijith who has masterfully created new menus, bringing a distinctive palette to San Francisco, embodying Mediterranean inspirations with local California Cuisine and gentle Spice Route overtones.
Chef Srijith Gopinathan shows off his Southern Indian heritage in a modern way by preparing Beet Sand, a salad garnish made of dehydrated beets. Chef Srijith first blends beet juice with almond dust and butter to chill over ice. Next he freezes this beet mixture until it is ready for grating. The beets are grated onto a dehydration plate and placed in the oven. Once all moisture has evaporated Chef Srijith presents Beet Sand, the perfect crunch of flavor for any dish especially a goat cheese salad.
