
Jumbo Sea Scallops
RL Restaurant has been bringing classic American cuisine to the Magnificent Mile since its doors opened in 1999. As Ralph Lauren’s first venture into the culinary world, he has created a modern city-club atmosphere making diners feel as if they are being featured in a Ralph Lauren spread. Executive Chef Ryan Pitts has been at RL for almost 10 years, carrying on Lauren’s vision.
RL keeps it classic by focusing on seafood, steaks, and salads, while continuing to add its own spin to American Cuisine. Many dishes are prepared tableside such as the Steak Diane, Crepe Suzette, and Bananas Foster.
Executive Chef Ryan Pitts is showcasing his Jumbo Sea Scallops, a refreshing entree, perfect for the Chicago summer season. Chef Pitts starts with the cucumber-tomato salad, enhanced with capers and dill. He tops this with an enticing balsamic infused whipped cream which is made in house. Chef Pitts flawlessly sears the jumbo sea scallops and surrounds the salad with them. The finishing touch is a drizzle of reduced balsamic, bringing the entire dish together.
